So randomly I had the strangest craving for some candied nuts. I’m not really sure why. And I thought instead of going to a carnival or walking around New York for a local food vendor, how about I try to make some at home!
Here’s what you’ll need for this recipe:
1 Cups Nuts
½ Sugar
¼ Tsp Vanilla
2 Tbsp + 2 Tsp Water
Now, if one cup of nuts is not enough for you, no problem. Double it up!
Over medium high heat, dissolve your water and sugar, making sure to coat your peanuts entirely with your mixture. Keep stirring with your wooden spatula as you bring to a boil to prevent any sticking and burning.
Now keep stirring and mixing as you notice your sugar coating reverting back to crystallization. Keep stirring and scraping up the bottom to avoid creating any burn spots.
Keep stirring until that crystallized sugar melts down into caramelized sugar. This is what we’re looking for!
If it smells like it’s starting to burn, remove from the stove and continue to mix.
Now you can add in your vanilla once. Once well incorporated, transfer to a silicone baking sheet or parchment paper, whichever you have handy.
Spread out for cooling. And this is the perfect time if you’d like, add salt.
