COPYCAT PANERA BREAD BROCCOLI CHEDDAR SOUP | DELICIOUS!

Are you looking to make a delicious broccoli and cheese soup, just like Panera Bread at home?

We’ll keep on reading and I’ll tell you my DIY on a broccoli cheddar soup, just like Panera Bread.

So I really like Panera bread. In fact, my favorite thing on the entire menu -I’d have to say hands down- is that broccoli cheddar soup…so good!  However, there aren’t many Panera Bread’s close to me, so I thought to myself, “hmmmm….,” why not make my own version at home? This is what I came up with!

Here is what you’ll need for this recipe:

½ stick salted butter

1 Small onion chopped

3 cloves minced garlic

4 tablespoons flour

2 cups chicken or vegetable broth

½ tsp black pepper

Sprinkle of Lawry’s seasoning

1 large or 3 small broccoli head(s) chopped

1 cup pre cut carrots

2 cups half & half

2 cups grated cheddar cheese


Before you start, take time to cut your garlic, onions, broccoli, carrots, and also grate your cheese.

On medium heat add in your butter and sautee your onions and garlic until lightly brown.  Once browned add your flour and mix. 

Once combined add in your chicken or veggie broth to the pot. Began to stir. Add a sprinkle of seasoning salt, black pepper, and half a teaspoon of paprika. Give that a whisk. 

Now begin to add your broccoli and carrots and let simmer for about 15 minutes.

After 15 minutes of simmering, add your half and half.  Give that a mix and then begin to add in your cheddar cheese.

Mix for 60 seconds, simmer for two minutes. Serve!

And here it is your very own broccoli cheddar soup. And it smells heavenly.  And I used lactose free cheese, so I can eat as much as I want!  You guys are in for a treat.
