EASY COPYCAT JIFFY CORNBREAD RECIPE

So since I moved to Canada, I must admit finding Jiffy Corn Muffin Mix has been quite the task. 

If any of you know exactly where I could buy a box of it, comment down below. 

However, after you try my copycat version of Jiffy Corn Muffin Mix, you won’t even need to get the box.

For ingredients, you’ll need:

-⅔ cup all purpose flour

– ½ cup of yellow corn meal

-⅓ cup of granulated sugar – white or brown 

– 1 tablespoon baking powder

– ½ teaspoon of salt 

– 2 tablespoons of vegetable oil

– 2 eggs

-⅓ cup milk

In a large bowl mixed together all of your dry ingredients. 

Whisk in two tablespoons of canola oil.  Whisk in your canola oil until all the lumps are gone and your batter is smooth.

Preheat your oven to 400 degrees and prep your non-stick pan. I’m using stoneware for my cornbread.

And my secret ingredient: 

⅓ cup of melted butter

Combine your two eggs, milk, and begin to whisk the batter together slowly. 

Add in your melted butter.  

Fill in level your pan and bake for 10 to 15 minutes.

And here it is your very own cornbread, just like Jiffy! 

I’m so excited! 

The entire apartment smells like cornbread…oh my gosh! Down to the last minute of baking– which I personally did a little bit too much on mine, however– just watch it between the 12 to 15 minutes and you’ll get the perfect coloring that you’re looking for.

It tastes like childhood! And so moist.
